A working aquaculture farm on the Capel River, raising Western Australia’s endemic marron in artesian-fed ponds — and serving them, straight from the water, in a restaurant built from the timbers of the old Fremantle Jetty.

The Marron

The world’s largest freshwater crayfish.

Marron (Cherax cainii) are endemic to the cool freshwater rivers of south-western Western Australia. Deep blue to jet black, capable of reaching 2.2 kg, they are the region’s quiet delicacy — sweeter and firmer than any lobster.

Established in 1988, Capel Marron Farm is a working aquaculture farm dedicated to showcasing exceptional, locally grown produce through a true pond-to-plate experience. We believe what you eat, where it comes from, and how it is raised should never be a mystery.

We proudly farm Western Australia’s endemic marron alongside Murray Cod and Silver Perch, raised right here on site. Our venue reflects this connection to place — built using recycled timber reclaimed from the old Fremantle Jetty.
